I occasionally use my sander as an abrasive planer when the stock is too big to fit through the planer, or isn’t appropriate for the planer. Since the sander feed belt moves things through from the bottom, it is pretty easy to shim underneath warped or cupped material to get the top flat(ish).
If they are already glued up, I’d take them to a shop with a wide belt sander and have them flatten the slabs. Personally, I’d do it with a scrub and smoothing plane, but these take experience, too. I have a 3X24 belt sander, and it’s the least used tool in my shop for a reason.
